Pumpkin Brioche Loaf (Bread Maker Machine)

This rich and buttery pumpkin brioche loaf combines the warmth of fall flavos with the soft, tender crumb of classic brioche. Perfect for breakfast, French toast, or holiday baking.

Ingredients

    For the Filling:

  • 170 ml Water
  • 2 Large eggs (Reserve about 2 tsp of 1 egg)
  • 70 g Brown Sugar
  • 175 g Bread Flour
  • 175 g All-Purpose Flour
  • 3 Tbsp Milk Powder
  • 2 Tbsp Pumpkin Powder
  • 1 Tbsp Rapid Rise Yeast
  • ½ tsp Salt
  • 85 g unsalted butter (cutter into pieces)
  • Egg Wash:

  • Reserved egg
  • 1 Tbsp Milk
  • Instructions

    1. Add all of the ingredients except for the butter to bread maker machine and set to "dough" setting.
    2. After a few minutes when the dough forms and ball, slowly add the pieces of butter while the dough is kneading.
    3. Line bread pan with parchment paper
    4. Once Dough is done proofing, lightly flour counter surface. Punch Dough down and put onto work surface. Knead into a ball, then cut into 8 equal pieces.
    5. Gently tuck the edges of dough into the center to form a ball. Then roll the dough ball, tucked end side down on surface, and gently roll ball in a small circular motion to seal the bottom, the put into bread pan. Do this to all 8 pieces (Cover dough with a clean kitchen towel between rolling dough balls to prevent drying).
    6. When pan is full, cover the pan with a clean towel and let rise for 1 hour.
    7. Preheat Oven to 350°F
    8. Whisk reserved egg and milk together and brush over the loaf.
    9. Bake for about 30 minutes or until internal temperature of the bread reaches 190°F
    10. Place pan on a cooling rack. Allow to cool for about 5 minutes then, using parchment paper as handles, lift bread from the pan and place on cooling rack. Allow to cool completely before cutting to prevent moisture loss.
